How to use Seaberries: Making Seaberry Nectar
We recommend pulverizing whole seaberries in a blender to fracture the seed coatings, which releases the seed oils, the vitamin E, the vitamin B12 that resides on some seed surfaces, and the protein in the seed. You can either use a handful of berries this way in a smoothie, or you can place an entire pound of berries in a blender, and add water sufficient to cover the berries by about one inch.. Water is necessary to allow you to effectively ‘rinse’ the seed meal out of the pulverized berries. We add about 1/3-1/2 cup of maple syrup to sweeten, but recommend everyone gauge sweetness to their own preferences. Blend until you see the seeds fracture, then strain through a fine mesh strainer ( or cheese cloth, or nut milk bag), agitating the strainer as you go. This makes about 1-2 quarts of pure nectar depending on how thick you want your nectar to be, and on the sweetness you choose. You can use the residual strained seed meal in cookie or muffin recipes.
